Description

Moisture binding and viscosity enhancement, this cold soluble product is very versatile and stable. Carboxy Methyl Cellulose (CMC, E466) is a modified cellulose derived from cellulose pulp, which is derived from wood pulp. CMC is soluble in hot and cold water to give a clear and colourless solution with a neutral flavour. The main characteristic of CMC is its ability to increase viscosity in aqueous solutions. When higher viscosity grades are used at lower concentrations (rather than the other way around) a less gummy mouthfeel is experienced.
