Fresh Hazelnut kernels are selected using the latest screening technology to eliminate impurities and make the product healthy from an organoleptic point of view. The product is then calibrated and ready for sale to the confectionery industry, small artisan businesses and for fresh consumption.

Before being toasted, hazelnuts must withstand rigorous quality controls in order to avoid infiltrations of foreign bodies and low quality hazelnuts. Such controls are carried out manually by our experienced and qualified staff and mechanically with the latest technology in laser and optical screening. Toasting is simply the process of cooking/baking the product in the oven. Our latest generation industrial ovens give us the capability to apply different parameters to this process in order to obtain a product that can fully satisfy our clients requests. The process of roasting not only allows to preserve the hazelnut for longer period of time but also exalts its taste and aroma. The finished product is generally vacuum packed in aluminium bags in order to preserve the delicious flavour.

Chopped toasted kernels are further refined using the best food processing machines on the market to produce a paste that is homogeneous and of the highest quality. Bio Nocciola produces hazelnuts paste that ranges from 20 to 40 micron in size. This tasteful finished product does not contain any additional preservatives or aromas.

To obtain hazelnut flour, we follow the same process of the hazelnut grain but in this case the product is further chopped for greater finesse. It is considered flour any finely chopped hazelnut of less than 1mm in size. Hazelnut flour has many applications and as an ingredient gives a rich, sweet, nutty flavour and dense texture to foods which many people enjoy.
