Cajun cuisine is a type of cuisine created in Louisiana in the 18th century by French Acadian settlers. They brought traditional French recipes with them and adapted them to what they could find, fish, or collect on land and sea.
Today, Cajun cuisine combines different styles and spices of typical Louisiana cuisine. This includes rustic French cuisine mixed with African, Irish, Mexican and Spanish cooking techniques and adapted to local natural resources and agricultural products from South America.
