Variable capacity static cryomacerator: it promotes close contact between the must and the marc at low temperatures. The grid, inclined at 45°, enables the filtered must to be drained and cooled by the temperature-control cavities, then constantly picked up and taken above the mark for the subsequent extraction of the organoleptic properties; the same grid allows discharge at the end of maceration. The sloping drill can also become a useful fermenter for carbonic fermentation or for the fermentation of red grapes. By removing the drainage grid, it becomes a normal tank for fermentation of white must, cold clarification, tartaric stabilisation or simply for storage
