The cheese produced by Cacio di Pienza is grounded in ancient tradition. The farmers have formed the Cooperativa di Cotignano, that perpetuates traditional cheese making methods: the milk supplies, including the characteristic meadow herb aromas from the Val d'Orcia meadows, maturing time and above all the particular care paid to the quality of cheeses. The cooperative stores almost all the available milk in an establishment that complies with EC standards: it can process large amounts of milk and produce different kinds of cheese. Our products are exclusively made from sheep's milk.
