Pink pepper is not a real pepper such as black, white or green pepper. Pink peppercorns are berries of the Peruvian (Brazilian) pepper tree. This tree is a member of the sumac and cashew families. It can be found in Brazil, Paraguay, Argentina, California, Florida, Texas, and Arizona. The aroma of the pink peppercorn is similar to the black peppercorn, but with a fruity aftertaste and is not as strong and spicy as the "real" peppercorns. The mixture of four colored pepper varieties ensures a strong and exotic taste. Three of them come from the same fruit, but the processing is different. The black peppercorns are harvested when the fruit is almost ripe. After that, they are roasted and dried until they turn black. For white pepper, the peel is removed before drying during the cleaning process. The green pepper is harvested when the fruits are young. The final peppercorn in the mix is pink pepper, which is actually the berry of a Peruvian pepper tree and is grown in South America. Thanks to the pink peppercorns, the taste is a bit sweet, but it is not intrusive and the overall aroma is a complex of all types of pepper in the mix.
