Monosodium Glutamate (MSG) is the sodium salt of glutamic acid, an amino acid naturally found in many vegetables, cheeses, mushrooms, and seaweed broth. It is usually obtained by the fermentation of starch, sugar cane, sugar beet or molasses. It is resistant to decomposition when cooked and turns brown when exposed to high temperatures in the presence of sugar.
