Ionic exchange polymers, when in touch with a solution containing salt compounds (i.e. ions), exchange certain ions with other ions having the same electric charge. In particular, potassium ions can be exchanged with hydrogen ions which will create a new tartaric acid molecule. Moreover, other ions, such as calcium, iron and copper, are partially exchanged. This treatment lowers the pH giving added protection against bacterial attacks (for example rettanomyces) which could generate anomalous fermentations.

In a crossflow filtration the filter-surface is a semipermeable membrane. The liquid passes through the membrane and across of it. Thus keeps it clean. Used for wine, fruit fermented, mead, beer. The membranes used by Bared do not create any mechanical resistance: are delicate on the product and do not increase its temperature. Filtration with Bared systems guarantees the brilliant and sterile product in one passage compared to other systems that require more filtration stages with resulting in greater stress on the product.

The system installs a membrane which divides the alcoholic liquid from an extractant (generally water). A joint-action of diffusion and natural osmosis makes ethanol molecules migrate to the extracting fluid removing the alcohol content. Suitable for: Alcohol removal from wine, beer or other hydroalcoholic solutions; Restarting a stuck fermentation; Correct “out-of-balance” liquids. It is also possible to adjust gas.

Single or multiple microfiltration systems with pleated or deep cartridges for liquid’s polishing and/or cold sterilization. In beverages, used as a pre-bottling microfiltration. In industry, used for liquid polishing.

The hyperfiltration plant (commonly known as reverse osmosis) allows the removal of a part of water by a semipermeable membrane and the action of a high pressure. The membrane is made of an organic material (polymer), with thickness of few microns, and supported from another organic material (supporting polymer). For the oenological application of the reverse osmosis, Bared use spiral membranes. Possible application of this plant is product concentration at various percentages: · max sugar recovery (up to 99%) · partial recovery (up to 60%) · concentration of coloured matter · partial or total rejection of acidity and salts.
