To make our BREIZH SURIMI crab sticks, our sailors venture off the Brittany, Ireland & Scotland coasts in search for the best the sea has to offer. If our products are so tasty, it is because they are made from Blue whiting fillets we freeze aboard our vessel so that they stay fresh, then we steam in our Saint-Malo workshop. Our surimi is full of "made in Brittany" proteins! Available in different formats, from 200 g to 1 kg, our crab sticks are packed in 3-sticks freshness bags inside the main packaging to enable their consumption split: no need to eat the full content once opened and no waste. *Kindly note in our Saint-Malo workshop we manufacture elaborated surimi products, chilled and frozen (sticks, shredded, mosaic rolls, bites, …) - under our own brand and private label, for Retail, Food Service and Food Industry. PESK BIZ is a range of 3 prepared seafood products made from the fish caught on our 2 vessels Joseph Roty II and Emeraude. Our source materials are then forwarded to our Saint-Malo workshop where the "Breton Fish sticks" are manufactured. PESK BIZ is indeed a Breton name which means Breton fish stick. Aboard our vessel, we process Northern Blue Whiting strong-protein-index flesh into one of the most qualitative surimi base raw material available on the market. Featuring gel strength (from 600 to >100) and whiteness (around 76) similar to Alaska Pollock, but with a higher elasticity (from >1 to >1.50), and without enzyme activity (contrary to Pacific Whiting - Hake), its industrial use is simple and consistent. It is particularly ideal to manufacture products such as shredded surimi, Japanese Kamaboko, squid rings and Baby eel imitations, moulded products with setting process or as blending to improve the elasticity of the paste… It also enables to make products without egg white, meaning without allergens, easily. We offer different quality grades to adapt to your use, and free from polyphosphate or sorbitol options to meet clean label recipes expectations. With no fishing seasonal interruption period, we can supply all year long.
