Do you know the origin of the Calisson de Provence? Calisson is one of the 13 Provençal Christmas desserts. It is best known as the emblem of the town of Aix-en-Provence. There are several legends surrounding the Calisson, but the best-known dates back to the 15th century with King René d'Anjou, the last Count of Provence. He is said to have asked a confectioner to make a sweet for his wife, Jeanne de Laval. When she smiled for once, one of her relatives said: Di calin soun ("These are hugs"). The calisson was born.
