Aboard our vessel, we process Northern Blue Whiting strong-protein-index flesh into one of the most qualitative surimi base raw material available on the market. Featuring gel strength (from 600 to >100) and whiteness (around 76) similar to Alaska Pollock, but with a higher elasticity (from >1 to >1.50), and without enzyme activity (contrary to Pacific Whiting - Hake), its industrial use is simple and consistent. It is particularly ideal to manufacture products such as shredded surimi, Japanese Kamaboko, squid rings and Baby eel imitations, moulded products with setting process or as blending to improve the elasticity of the paste… It also enables to make products without egg white, meaning without allergens, easily. We offer different quality grades to adapt to your use, and free from polyphosphate or sorbitol options to meet clean label recipes expectations. With no fishing seasonal interruption period, we can supply all year long.
