Erythritol is suitable as a substitute for sugar. Healthy product properties and applications Erythritol is suitable as a substitute for sugar. Erythritol is quickly absorbed into the blood, with peak levels in less than two hours; most of an oral dose (80-90%) is excreted unchanged in the urine within 24 hours. Erythritol has no effect on blood sugar or insulin levels and can therefore be an effective sugar replacement for diabetics."
