This stunning, firm textured, medium to large grain snail caviar is known for its unique earthy flavor and beautiful bright white pearls. Each snail produces a limited number of firm pearls 4 mm in diameter(about the same size as trout roe), making this a highly luxurious roe product that has to be meticulously harvested to produce even a small amount of caviar. The incredible eggs contain none of the sea notes and/or fishiness that can sometimes turn people away from caviar and other fish roes. Instead, the flavor of escargot caviar is a fresh combination of earth, woods and mossy notes that can really "pop" on beef, pork, vegetable, and fresh-water seafood dishes, both in taste and aesthetics.
