Our Beaujolais-Villages is vinified in the same way as our crus, which gives it power on the palate while retaining its fruitiness. This wine has a beautiful, deep colour and a good tannic structure. The nose opens with notes of ripe, intense red fruit. It has a fine structure on the palate, with supple, silky tannins. This lively, crisp wine has good aromatic persistence.

The grapes are harvested by hand. For this Cuvée, we only use the first presses only the first pressings of our best vintages. The wine is matured in vats only during the first alcoholic fermentation. for about 3 months, followed by bottling with our second fermentation second fermentation to create fine bubbles. The wine is then aged on laths for a minimum of 1 year for optimum quality. Food and wine pairing : The Blanc de Blancs is an ideal accompaniment to aperitifs or simply grilled fish. simply grilled fish or roast veal with olives. Vineyard: Located in the very south of Burgundy, on the border with the Beaujolais region, the appellation's area extends beyond that of the village. The village of Saint-Vérand bears a "d", but the appellation does not because it is harvested in six villages. It dates back to 1971, and is the second last appellation to be granted in the Mâconnais region. Viticulture : Soil: Jurassic limestone that extends the limestone layers of the Côte d'Or, ideal for Chardonnay. Planting density: 8,500 vines/hectare. Pruning: Guyot. Age: 70 to 80 years Harvest: By hand Yields: deliberately low, between 35 and 40 hectolitres per hectare depending on the year. Small grapes with a high concentration of sugar. Vinification: Very long, cold vinification (between 15°C and 20°C). Ageing: 20% aged in oak barrels for 3 to 5 wines. The rest is matured in vats for 6 to 8 months on fine lees.

DOMAINE GAEL MARTIN is located in Saint-Véran and has produced Crémant de Bourgogne wines for a number of generations. Today, our family vineyard covers 25 hectares strategically located across some of the finest terroirs of Macon and northern Beaujolais. We produce between 80, 000 to 100, 000 bottles annually, divided between Burgundies and Beaujolais for sale in France and internationally. Because the quality of our wines is our greatest concern, we are delighted to be certified HEV (high environmental value) . We use traditional craft methods and our grapes are harvested by hand to guarantee the excellence and unique character of our wines and cremants.

Nous sommes fiers de vous annoncer que notre auditeur nous a annoncé que nous sommes certifiés. Ce label HVE a pour but de rendre notre exploitation la plus transparente possible pour le consommateur. La haute valeur environnementale s'appuie sur des indicateurs de performance environnementale qui portent sur l'intégralité de l'exploitation. Cette certification nous permet d'attester que les éléments de biodiversité sont très largement présents sur notre exploitation et que la pression de nos pratiques viticoles sur l'environnement est réduite au minimum.
