The main components are beet anthocyanins and beet yellows., Beet red is a red-purple to dark purple liquid, block, powder or paste, with a peculiar smell, easily soluble in water, milk, 50% ethanol or propylene glycol aqueous solution, and insoluble in absolute ethanol, propylene glycol and acetic acid. It is insoluble in organic solvents such as ether, acetone, chloroform, benzene, glycerin and grease. The aqueous solution presents red to purple-red, bright color.
