According to Cretan food standards and by respecting the olive tree fruit itself, we have created an extra virgin olive oil of the highest quality and produced in the olive groves from the Kolymvari area in the island of Crete, where olive trees are cultivated through years of care and with a high sense of responsibility and respect towards the product. Our olive tree's fruit is harvested early and traditionally by hand, from October to early December, and is instantly processed (within 12 hours from harvest). The maximal chlorophyll prominent in unripe olives makes the early harvested oil ​(Agoureleo in Greek) verdant and richer in healthy bioactive molecules like Oleocanthal and Oleacein.
