Black garlic in the form of a whole bulb (known as a head of black garlic) is a good way to consume your garlic, as each clove of black garlic remains protected in its natural envelope, and requires nothing else for storage and preservation. The whole head of garlic is the simplest, most natural way of consuming black garlic: you have the head of garlic in your hand, browned as it comes out of the steamer, transformed by the Maillard reaction. Organic black garlic can be used in a wide range of dishes, but it can also be eaten on its own. Black garlic sauce, black garlic marinade, black garlic purée or simply sliced whole into thin strips in your pasta dishes. Black garlic goes well with all types of meat, charcuterie, foie gras, fine fish (sole, monkfish, sea bass) and shellfish. For those with a sweet tooth, black garlic goes wonderfully with chocolate and citrus fruit.
