Our Riviera Ligure DOP selection is obtained from olives coming from Lucinasco olive groves, pressed to perfection in our oil mill. Cold produced and packaged must (unfiltered) after simple natural decantation. The bottle is wrapped with a sheet of gold paper, which ensures the protection of the product from light.

The production of olive oil at the Casale Falchini farm in San Gimignano, in the province of Siena, also includes an oil bearing the name of the firm itself Casale Falchini, also a Tuscan excellence that many customers have already had the opportunity to appreciate, enjoying it on the typical dishes of the local traditional cuisine. This extra virgin olive oil is made from the olives grown in the olive groves owned by the company, located to the southwest of the vineyards. Below we see the suggested properties and combinations. The CasaleFalchini extra virgin olive oil is obtained from the olive trees owned by the farm near San Gimignano of the following varieties Moraiolo, Frantoiano, Leccino and Impollinatore. Among its organoleptic characteristics, the golden green color stands out with greenish glows, while the perfume is fruity of green apple. It has a slight hint of apple, ripe fruit, green leaf and grass on the palate.

The harvest has been characterized by high quality olives and by a low and uneven distribution of the fruits on the canopy. We started hand-picking the olives from the trees early October and the work has been completed about two and a half weeks later. On average the overall production has been below the yield of previous seasons. Nonetheless, we were able to cold press a flavory monovarietal leccino, with a fresh almond accent, and our traditional EVOO blend. It has been a great team effort, with the support of the Marignoni and Rossi families and some other friends that have been working this land in the middle of Maremma, Tuscany, for almost three decades!

Over the protected territory known as the “path of oil” in Umbria, on the rolling Amerini hills is where our olives are grown. We extract our oil FenOlio exclusively from our own olives. The oil is rich in polyphenols, powerful natural anti-oxidants with high levels of vitamin E capable of opposing the damaging effects of free radicals. The quality of FenOlio isn’t merely characterized by the low level of acidity, but by a number of organoleptic qualities achieved through impeccable production processes. The exceptional quality of this product derives from an accurate selection of organic local olive tree groves. It is a result of a constant and careful meticulousness applied throughout the olive transformation process; defoliation and cleansing as fundamental work model contribute to higher standards of hygiene throughout the process, while harvest and storage occur extremely speedily in order to avoid fermentation thus fully preserving the taste properties.

We'd like to present our dop olive oil to you. We use the olive tree“Moraiolo”, common in Assisi and Spoleto. It contributes to the production of an oil with an intense flavour, strong fruity taste, and stable over time. Its agronomic and qualitative characteristics are enhanced and blended with the other varieties of “Leccino”, “Frantoio”, and “Dolce Agogia”. These organoleptic characteristics are even brought out by the the type of the cultivated land, its cultivation methods, the attention drawn to the timely milling and last but not least the climate. As a matter of fact, the medium-low temperatures of the Autumn season foster the formation of oleic acid in the olives.
