Elaboration: Wine made from white grapes of the Viura variety and red grapes of the Garnacha variety, according to the following process: Manual harvesting, partial destemming, sulphiting, crushing and pressing of the grapes to obtain a must that is cooled in the exchanger towards the settling tank. It is set off by the flotation technique with the help of nitrogen, which drags the turbidity upwards and the clean must is transferred to the alcoholic fermentation tank. Alcoholic fermentation with selected yeasts at a temperature of 16ºC, with a dosage of fermentation aids and oxygen, to develop its aromatic potential and facilitate the end of fermentation. After a 10-day rest, it is racked with its fine lees, until 20 days later it is clarified. Stabilization and bottling. Presentation: Bottle: Bordeaux 75 cl. Tocando Cielo Rosé wine is made with grapes from the winery’s estate, grown in accordance with the principles of integrated agriculture. The vineyards where our Grenache grapes lie are on average 20 years old and grow on rolling hills in stony, loamy-limestone soil in Olite village, in the middle of Navarra with Mediterranean and Pyrenean influence. The 2019 harvest was small in quantity, in particular when compared to the previous year. After a dry, cold winter and stormy spring, the summer was warm and didn’t have much rain, enabling complete and homogeneous ripening. Production is limited to 15,000 bottles.
